Up to the middle of the 19th century refined sugar, spices, nuts, and dried fruit were very expensive, so it was an honor to be served cake. It represented the best culinary offering, honoring most valued and loved people. Today cake is not super expensive, and we have many choices (store bought, box mix, homemade or made to order by a bakery). Nonetheless, the message remains constant. Cake says: you are important and we love you!
